Pumpkin Gnocchi

What do I need?

½ Pumpkin

1 Potato

Grated cheese

1 Egg

2 cups whole wheat flour

 How do I do it?

Boil the pumpkin and the potatoes on salty water, cool and mash with a fork

Mix the puree with egg and grated cheese, then add the whole wheat flour and begin to form a bun.

Add plain flour if necessary so that the dough take a little more consistency.

Knead until dough forms a ball. Shape small portions of the dough into long "snakes". On a floured surface, cut snakes into half-inch pieces.

Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top.
